Ofir sure, I've used it for several shopify projects - I used Udesly, but I would recommend using something like liquify or shopyflow.

as more platforms are being used, the room for error and potential website down-time increases

Do you know about an AI - tool that converts the figma files to shopify templates? (I know there are some shopify apps who are doing it, but I rather not using an extra app)

Ofir not aware of any - I'm sure somebody is working on it though. We are not working on anything like that.
