Customizing Header and Footer Items in Sitemap and Wireframes

Hello! I am working with sitemap and wireframes and I wonder how I can customise specific things like header and footer items - it seems i can rename items in the header for example but its not clear how I can add or remove items within the header or footer - these are “locked”. Any tips?
