Does anyone know how to change the color of the font in this uncommon component?
I would like it to go from grey to white, not grey to black.

its just an opacity effect so you just need to select the text and change it to white. Its powered by custom code so you have to publish the site.
If you are in Site Builder - these kinds of edits are not possible - you would have to export to Figma or Webflow to change text colors.
